Studies of the gastric juice have centered largely around the question of acidity and little attention has been paid to the base in the gastric secretion. Since Reaumur isolated the gastric juice and proved its solvent action on ingested food, gastric secretion has been the subject of extensive research. But Young's observation that the secretion is strongly acid, and Prout's that the acid is hydrochloric directed study to the acids with almost total indifference to the other constituents.
