This encyclopedic volume deals with bromatology in all its aspects. Fifty-five experts have contributed one or more chapters to the three sections. In general organization it is similar to Wohl's earlier "Dietotherapy." With rewriting and the advances that have occurred in the past decade, 80 per cent of the text is considered new.
