Contrary to accepted views, recent experimental studies in man have emphasized that dietary cholesterol greatly affects serum lipid levels. Moreover, in animals dietary cholesterol is the key agent in the pathogenesis of experimental atherosclerosis and myocardial infarction. The present investigation was planned to test the effects of restricting cholesterol in the diets of patients with coronary heart disease, diabetes mellitus, and hypercholesterolemic xanthomatosis.
A diet was designed which restricted cholesterol to 100 mg per day. It was nutritionally adequate and provided calories to maintain body weight. Protein was 15% of total calories, carbohydrate 65%, and fat 20%. The iodine value
