A study has been made of the effect of starch ingestion on iron absorption in patients who absorb iron excessively. Two of the group studied were anemic habitual starch eaters, one had hemochromatosis, and one was an asymptomatic daughter of a man with hemochromatosis. The absorption of iron in all subjects was at least three times normal.
One microcurie of 59Fe in 250 µg ferrous citrate carrier was administered orally to each subject, and the subsequent absorption of the iron was determined using whole-body counting techniques. Two studies were made on each patient, one without starch ingestion and the second
