A complete translation of an important classic (Garrison-Morton, No. 1025) in the physiology of nutrition, energy metabolism, and heat regulation. The significance of Max Rubner's work and the qualities of this historic monograph are reviewed briefly in a foreward by the editor, R. J. T. Joy, who supplies a short bibliography. For a more detailed, but still brief, account of Rubner's contribution, see editorial "Max Rubner (1854-1932) Energy Physiologist" on p. 86, JAMA, October 4, 1965.
A valuable reissue for medical school libraries and one that will be of interest to professional and amateur students of the history of physiology
