One striking feature of the field of taste that this volume accurately reflects is its multidisciplinary nature; rarely, however, is the much more difficult interdisciplinary approach seen. The volume has succeeded well in its broad and interesting coverage. The advantages of this book as an in-depth introduction to the state of knowledge of taste are several. Although several symposia on taste (and olfaction) have been published in recent years, these have dealt with ongoing research, usually without the overall perspective that the present volume gives. This book is the first major compilation in many decades that contains detailed reviews of
