Aging—a condition to which we all aspire and of which we all despair, both as patients and as physicians—is increasingly a subject of clinical research and concern. The Bureau of the Census has extimated that there are approximately 25.5 million persons in the United States over the age of 65 and that this age category will be increasing sharply over the next 3 decades. Studies of the relation of nutrition to the processes accompanying aging are being reported in the widely scattered literature of nutrition, medicine, geriatrics, nursing, dietetics, psychology, and sociology, to name several.
