Goiter occurs endemically in many parts of the Carpathian Highlands; and the worst goiter centers are found in those poor villages where, during the unfavorable months of the year, more than two thirds of the population live to a great extent on cabbage, with the addition of potatoes, corn bread and oats. How great a part cabbage, which is utilized as boiled sauerkraut, plays in the dietary is indicated by the fact that a family of eight members may pickle as much as 1100 pounds for their own use.
