The reports by Peterson that the addition of soybean sterols to experimental diets of chicks appeared to inhibit the absorption of cholesterol1 and to effect a decreased incidence of atherosclerosis2 have stimulated study of the effects of ingestion of various plant sterols.
The presence in higher plants of sterols (phytosterols) which are closely related to cholesterol has long been recognized. The most widely distributed of the phytosterols are the sitosterols, of which there are at least five.
