The Raw Food Diet may well be defined by a literal translation of the words of Bircher-Benner1 who began using the so-called Rohkost Diät in 1895: "a diet composed exclusively or predominantly of edible plant life (fruits, leaves, roots, nuts, seeds) in uncooked condition, with exclusion of meats, eggs, cheese, white flour, extract sugar, alcohol, sodium chloride. . . ." He observed that this type of diet exercised a "far reaching, nonspecific therapeutic influence" on many kinds of human disorders, and in 1897 he opened his clinic in Zürich for the treatment of the sick with food.
