Few American physicians will be able to read the text of Bread in Nutrition in the Netherlands, but those with a special interest in nutrition and metabolism may find the bibliography of about 3,500 references to be very useful. These references, drawn mostly from the English and American literature, cover the topics of composition of wheat and wheat products, factors influencing composition, the physiology of nutrition, enrichment of wheat products, and methods of analysis.
