Concise, relevant, and up-to-date are descriptions of this book. The author has succeeded in his effort to present to the lay person many essentially sound medical and dietetic principles regarding the fat-controlled diet. Dr. Zugibe, in developing appetizing and interesting recipes, gives the family chef an opportunity of substituting polyunsaturated fats for the saturated fats without losing the satiety value of the foods. The defatting, injection, and separation procedures are valuable techniques which will greatly enhance the fat-controlled meals.
