This well-known textbook is, in this new edition, very much like its predecessors execpt for the conspicuous improvement in format and typefaces. The first 19 chapters review pertinent normal physiology, metabolism, biochemistry, psychology, and investigative methods with special attention to all major and minor dietary components and discuss antimetabolites, toxic foods, and food additives. The next 19 chapters survey nutrition in disease, by system or discipline. The last five chapters focus on infancy, adolescence, pregnancy, aging, and stresses. Most chapters are excellent, a few are mediocre or tedious. Some clinical and research specialists may look on chapters within their provinces
