Although the title suggests an all-inclusive coverage of nutrition and dietetics throughout the world, the subject matter in this book is rather limited. In fact, it could be more appropriately grouped into four major categories: the nutritional status of selected groups; food technology, including production of protein; the physiology of protein metabolism under various conditions; and the feeding of children.
Equally surprising is the marked variability in the quality of the various chapters composing this book. Indeed, had the editor eliminated or critically edited several of the less accurate chapters, the entire volume would be substantially more valuable and, hopefully,
