Several topics relating to fats in human nutrition are reviewed comprehensively in the 10 chapters of this book. It offers complete and up-to-date information on the epidemiology of fat intake and atherosclerosis, the absorption of cholesterol from the gut, the relation between serum cholesterol levels and fat intake, and the clinical problem of fat malassimilation. However, many other important and relevant subjects unfortunately were omitted. Such topics as the structure and metabolism of lipoprotein and human obesity are not discussed as such, and aspects of these subjects are only hinted at.
